This coffee from one of our favorite producers, Sebastián Ramírez, is a very fruit-forward Caturra co-ferment from Colombia. After the cherries are picked, it undergoes anaerobic fermentation for 120 hours and yeast, dehydrated strawberries and red fruit glucose is added. 

We’ve roasted this coffee to be a little more towards the medium end of the roast profile in an effort to cater to all palettes. The resulting cup is juicy, quite sweet, though not very acidic, with a bit of a bigger body. Heavy notes of strawberry jam/candy, cherries, raspberries and more abound. 

For those that have previously tried this lot, this coffee needs no introduction. If you haven’t had it before, this would be both a great introduction to the co-ferment process and a welcome addition for co-ferment/natural fans.
