This very special coffee from Unblended is a blend that's a 20% mix of Sebastian Ramirez's cinnamon co-ferment from Quindio and 80% Unblended's Recruitment Lot from Antioquia and Cauca. This blend produces a surprisingly balanced and full-bodied cup with fruit notes of cranberry and cherry and a noted, though subtle, taste of cinnamon on the back-half. It's a comforting medium blend that you will want to keep with you through fall and deep into winter.
Due to a portion of this blend consisting of a co-ferment, we personally recommend letting this blend sit for a couple days past roast date before grinding if possible. Generally speaking, naturals/co-ferments de-gas, settle and develop their natural flavors at a slower rate than washed coffees, but try and see what works best for you!
