This crazy coffee comes from Ximeng in China. This specific lot has been around for a few years and those that are fans of powerful tasting natural processes may be familiar with it already. This coffee goes through an extreme 30 days of anaerobic fermentation, and an additional 20 days of sealed fermentation. Very experimental and very out-there.
The extremely extended fermentation time leads to a multitude of different spectrums of taste after roasting (we personally find peak flavor to be 4-5 weeks past roast but surprisingly works good even after just two days of roasting), but deep, dark funk is prominent throughout regardless of roast profile. We approached with a longer development time to a medium roast profile to enunciate more booze-y flavor notes but still has some more tart fruit in there as well.
