We have taken this is a new level for us. This is a dark roast that has been taken past second crack to give a ultra smooth tongue feel. Lots of body and a creamy like feel. Even thought a lot of flavor notes have been removed this is one not to be denied its due traits. Even thou I am one who will run from a dark roast ( even the slightest hint of darkness) I decided to try this and what a surprise it was. This is one that you can drink a cup or two without the acidity hurting you in the evening.

The name Huixoc, which means “water spring” in the mam dialect, was given to this beautiful coffee farm by its founder, Jose Olivio Chavez, a coffee exporting and marketing pioneer, in 1940. It is located in the lush mountains of La Democracia, a small town in the Huehuetenango province, in northwestern Guatemala. There are several water springs located on the farm that help provide adequate moisture during the dry season and have also provided the energy to run the coffee mill throughout the years. The region’s rich soil, adequate rainfall and high altitude combine to create favorable conditions for producing an excellent quality coffee.
